This is a great little white wine! We wanted to create an expressive
wine with considerable aromatic intensity and good concentration
and persistence. Pellicular maceration of Xarel•lo gives
complexity and character.
Varieties: Xarel•lo (85%), Muscat (10%) and Subirat Parent (5%).
Winemaking process: Partial pellicular maceration of the must to achieve enhanced
aromatic extraction and structure in the mouth. Crushing, pressing, static
racking (24 hours) and controlled fermentation in stainless steel tanks at
17ºC.
Tasting notes: Pale yellow in colour. Brilliant. Refined, complex aroma, notable
for citrics (grapefruit), syrups, the scent of white flowers, freshly-cut grass
and anise (fennel). Strong, clean and unctuous in the mouth, reproducing the
aromatic complexity in the nose, with a slight acidity.
Serving temperature: 6-8º C.
Evolution: Best enjoyed in 2007 or 2008
Label: The label shows a leaf from the Mastic tree (Pistacia Lentiscus), a
Mediterranean shrub that is very widespread in this region.
